Cross Country Trip...where to stop?

I'll be making my trek to the last frontier at the end of this year and will be driving from North Carolina up to the Alaska Highway Ferry Terminal (still haven't posted the schedule so not sure if it's leaving out of Washington or B.C).

Along the way I'd like to stop off at one or two places for a day or half day of fishing. It will be the end of December so it'll probably be just a half day thing since the wife will lose interest if she gets too cold and miserable.

Where would you guys stop? Would you just haul arse West and hit a spot in Colorado and then head to Idaho or Oregon?
